We only take credit for tossing cheese curds into this wonderful recipe we were introduced to while helping at an orphanage in Mexico. The masterful cocinero and her staff would receive food donations nearly every day from stores or benefactors (often what was plentiful and in season, or whatever was a day old and couldn't be sold at the store.) We chopped and prepped alongside these ladies as they whipped up substantive meals for more than 120 children & staff. We really enjoyed this carrot flauta one evening, so thankful for the delicious meal shared under the tented cafeteria, and the recipe to take home. Check out Esperanza Viva in Pueblo Mexico, a special place that is home, school, church and most importantly family to children who are underprivileged, abandoned, orphaned or come from the streets.
